I'm not sure it's really "switching" species. Really, speciation is just adaptation on a sub-group level. The best way I can think to explain it is that two isolated groups of the same species evolve to fit their specific surroundings, and then, after time, become two different species entirely. It's not that they "need" to become different species, but rather that enough time in different habitats results in enough of a change that you can no longer accurately categorize the two species as the same.
